For a quick, nutrient filled dinner, try this recipe for salmon with butternut squash and zucchini.
Salmon has a ton of health benefits, and is one of the best fish to incorporate into your regular diet. Any time you can add a good portion of veggies into your day is always a plus, but zucchini helps maintain optimal health and butternut squash is a great source of fiber and vitamins as well.
Thanks to the amazing spice blends of Primal Palate and Trader Joe’s, you don’t need to add a lot of extra calories to the food you’re preparing in order to season the fish and veggies. Add that to the ease of just putting everything in the oven, and this becomes a meal that’s significantly healthier (and even faster!) than ordering your usual take out.
You’ll need…
Serves 1 – double everything if you’re making dinner for two!
1 salmon filet
1 zucchini
8 ounces or 1 cup of butternut squash (You can buy this precut from your local grocery store for even easier meal prep)
Primal Palate seafood seasoning
Trader Joe’s Everything but the Bagel seasoning
Salt
Pepper
Olive oil
- Preheat your over to 400 degrees
- Season the salmon with the seafood seasoning andplace on a baking sheet or line the oven rack with aluminum foil (add oil to avoid sticking)
- Add a small amount of salt, pepper, and olive oil to the butternut squash and place on a baking sheet or line the oven rack with aluminum foil (add oil to avoid sticking). Add the zucchini to the same sheet or rack.
- Put the butternut squash and zucchini in the oven and bake for approximately 30 minutes. Check the consistency of the veggies and bake for longer if you like them crispier.
- Place the salmon in the oven and bake for 15 minutes. For extra efficiency, add the salmon while the vegetables are halfway done cooking. While your dinner is in the oven, you can use this time to tackle something else from your to do list!
- Sprinkle the EBTB seasoning on the zucchini before serving.
