Lentils seem to be a (wrongfully!) ignored super food. They have so many health benefits, but it’s hard to incorporate a new food in your diet, even if it amazing, if you don’t know how to cook it. Enter this great recipe from NY Times Cooking. It takes about 30 minutes to make, but it’s worth it. Not only is it delicious, but it’s amazing for meal prep. One batch makes at least four servings, which means no more sad desk lunches this week. Try it out, and tell us in the comments what you think!
